Keto Cauliflower Rice Hash

Ingredients
Olive Oil
½ tablespoon
Breakfast Sausage
4 ounce
Red Bell Peppers, Raw
1-¼ ounce
Cauliflower Rice
1 cup, cut pieces
Salt
¾ teaspoon
Black Pepper
½ teaspoon
Garlic Powder
¼ teaspoon
Paprika
½ teaspoon
Crushed Red Pepper by Simply Organic
¼ tsp
Onion Powder
¼ teaspoon
Hard Boiled Egg
2 large
Parsley
½ tablespoon, chopped
Recipe Steps

Step 1
Heat the olive oil in a medium sized skillet over high heat. Add in the sausage. Use a spoon to break the sausage apart and cook until browned and crumbly.Step 2
Chop the red bell pepper and stir it into the skillet. Stir in the cauliflower rice and all seasonings as well. Cook on medium heat for about 5 minutes - until the veggies are cooked through.Step 3
Remove the skillet from the heat. Just before serving, lay two sliced hard boiled eggs over the ingredients as well as a sprinkle of freshly chopped parsley.Step 4

Great recipe , I scanned the ingredients separately and 2 serving equalled 5 carb .I used Heck chicken sausages ,3/4 cup cauliflower rice , with smoked paprika and fried an organic egg cooked in the middle .I added chopped 20g green beans and served on top of fresh spinach

This was very good and filling. Next time I will use zesty sausage and scrambled the eggs. I riced the cauliflower myself and it kind of melded together with the sausage which made it very yummy.

This recipe was surprisingly filling. I added 1 Tablespoon of full fat sour cream on top of the two eggs, then mixed it all together. I am stuffed and it smelled so good that my vegetarian daughter wants me to remake it for her with veggie sausage. This would also be excellent with sharp cheddar if you had the calories or macros to fit it in. Yummy.

We had a modified version of this for breakfast this morning and really enjoyed it! I didn’t have any breakfast sausage, so I subbed in some nice chorizo and my bf is not a fan of hard boiled eggs, so I scrambled them into the hash. I also had a few slices of scallion tops left from yesterday, so I added that with the parsley. It turned out so well, he’s already asked when we’ll be having it again! Thanks for this great recipe inspiration!

Delicious, I used a plant based sausage and instead of a hard boiled Egg, I used l scrambled egg whites

This recipe was made with a plain ground "breakfast sausage". If that is not available to you, ground pork is a perfect substitute.

This was really enjoyable. I used frozen cauliflower and less red pepper and just a 1/2 tsp of heavy cream to make it saucier. Definitely will make again.

Not sure what I did wrong but this could only yield one serving for me using 1 cup frozen cauliflower rice. I’m I doing it wrong?

Hi there, The best way to portion 2 servings from 1 full recipe is to measure by weight. One serving is 4.5 ounces. Frozen cauliflower rice does shrink as it loses water during cooking, so perhaps this caused some of your confusion. Hope this helps!
