Keto Butter Stuffed Radishes
A twist on the classic French hors d’oeuvre, these delicious radishes are stuffed with butter, salt and fragrant chives.

Ingredients
Radish
12 small
Unsalted Butter
1 tablespoon
Chives
½ tablespoon, cut pieces
Salt, Sea Salt
0.5 teaspoon
Recipe Steps

Step 1
Carefully slice the bottom off each radish creating a flat base and remove the tops. Using a sharp knife, carefully cut out the center of each radish.Step 2
Bring the butter to room temperature and finely chop the chives. Add the butter and chives to a small bowl and mash together to combine.Step 3
Using a small spoon or knife, fill each radish with the herbed butter. Serve immediately.

I’ve made a similar recipe where a very salty compound butter was set in a ramekin next to whole radishes. i used the CM recipe here to make the compound butter, but NOTE, they call for salt in the ingredients but don’t say what to do with it. It goes in your butter. It will be extremely salty, as it should be. if you use radishes and decide to scoop them as described here, don’t scoop them as much as shown in the photo. You only want a little dab of this salty butter on your radish. this time, i chose to use a daikon that i had on hand and quartered and sliced it. dabbing a bit of the compound butter on it. quite yummy! 5-stars for the taste, knocked a star off due to the faulty instructions and misleading photos.

This looks interesting. May try it. Photo seems misleading, though. One tablespoon of butter will not create 12 fluffy radish fillings. Just saying.
