Ingredients
Spinach Frozen Chopped Or Leaf Unprepared
6 cup
Cream Cheese Spread
5 ounce
Garlic
1 clove
White Onion
1 medium - 2 1/2" diameter
Unsalted Butter
1 tablespoon
Mustard
1 teaspoon
Spices Nutmeg Ground
⅛ tsp
Cheddar Cheese
1 cup, grated
Salt, Sea Salt
¼ teaspoon
Black Pepper, Ground
⅛ teaspoon

Step 1
Preheat the oven to 350 degrees Fahrenheit.Step 2
Set the frozen spinach aside to thaw, then drain away any excess liquid. Arrange the thawed spinach in an oven proof dish.Step 3
Melt the butter in a pan over a medium heat and finely slice the garlic. Add the garlic to the pan along with the onion and sweat until tender.Step 4
Add the mustard and cream cheese and stir until the cheese has melted and you have a thick sauce.Step 5
Add the nutmeg and the cheddar and stir until the cheese has melted.Step 6
Remove the pan from the heat and pour the cheese sauce over the thawed spinach. Season with salt and pepper and stir well.Step 7
Scatter over the Monterey Jack cheese.Step 8
Bake for 15-18mins until bubbling and golden.

Oh my guuuhh it’s so freaking good, too. Probably the best keto recipe I’ve made yet. So creamy and delish. I diced up just a little bacon in it to give it a little texture. 👍🏻👍🏻👍🏻👍🏻👍🏻

The ingredients do NOT include Monterey Jack Cheese. Confusing. AND the amount of spinach (I made it 2 servings) is MUCH too much for the amount of cheese that you pour over. I ended up having to take everything out of the oven, mixing it all by hand then because no Monterey Jack was listed and I have none, I had to use shredded mozzarella. I can only hope that now we're all stuck home because of COVID, I haven't wasted that precious spinach and the cheddar cheese.
