Keto Chicken Slider Sandwiches

Feed any crowd with this kid-friendly recipe that is finger-licking good. Really, if you don’t have napkins, you’ll be licking your fingers clean of this sandwich filling! Hot and saucy chicken is dripping in a special sauce, just like what goes on your drive-thru burger. The special chicken filling is spread over cheddar cheese inside two halves of a Keto cloud bread bun. The chicken sliders are cut in half for easy snacking. There are lots of Keto ingredients you can put inside your special chicken slider. Fresh lettuce, spinach, tomato, red onion, pickles, cabbage, and mushrooms are all low-carb flavorful choices. Choose ingredients that will add different textures and won’t fall out of the sliders when sliced through. The cloud bread will be strong enough to hold extra toppings.

Meal Prepping Tips

If you assemble the sliders, you cannot refrigerate or keep them any longer than a few hours. Otherwise, the special sauce and chicken will start to break down the cloud bread. What you can do is store the chicken filling and cloud bread separate from each other to stay fresh for up to 3 days in the refrigerator. Assemble the sliders when you’re ready to eat.

    Separate the eggs, and keep the yolks aside while you add the whites to a stand mixer. Whip the egg whites at high speed until they become stiff. Transfer the egg whites to a bowl to sit aside, and wipe out the mixing bowl. Add the egg yolks to the stand mixer, and begin whipping them at high speed until they become thickened, pale, and a little bubbly. This can take 5 minutes or longer.

    Add softened cream cheese to the stand mixer, and whip the egg yolks and cream cheese until they combine into a lump-free, light yellow mixture. Whip sesame seeds and almond flour into the thickened egg yolks. Next, use a spatula to fold the egg whites from Step 1 into the egg yolk batter. Be careful not to break all the bubbles you’ve built in the egg whites.

    Turn on an oven to preheat to 350 degrees, and line a large sheet tray with parchment paper. Scoop ¼-cup portions of batter onto the parchment paper, and let the batter naturally settle. You may gently reshape the batter into even circles for slider buns. Bake the cloud bread for 15-17 minutes, until the bread is spongey with a dry, golden top. Let the cloud bread fully cool before slicing it.

    While the cloud bread is baking and cooling, make the chicken for the sliders. Pat raw chicken breasts dry with paper towels and then rub the olive oil into the chicken. Season the breasts with salt, pepper, lemon pepper, onion powder, and garlic powder. Heat a skillet over medium-high heat, and place the chicken in the pan seasoned side down. Let the spices on the chicken char and the edges of the chicken turn golden before flipping the chicken over to finish cooking.

    Transfer the cooked chicken to a cutting board, and let it rest for 5 minutes before chopping the chicken into small diced pieces. While the chicken is resting, whisk together mayonnaise, ketchup, and minced pickles in a mixing bowl to make the special sauce. Add the chopped chicken to the sauce, and mix it all together to combine. Set the bowl aside and slice the cooled cloud bread into halves like buns. The cloud bread is very thin, so make sure you’re slicing with a very sharp knife for even cuts.

    Lay a slice of cheese on each bottom half of cloud bread. Spoon the special chicken filling onto the flat cheese slices, and spread it out in a thin layer no wider than the cloud bread. Place the bun tops over each slider and gently press down to keep the sandwich together. Cut the sliders into halves for easy serving and eating. Enjoy warm or cold.
