It doesn't get much easier than this 3-ingredient Keto sheet pan recipe. Chicken is marinated in lemon zest, lemon juice, minced garlic, oregano, and olive oil. For best results, leave to marinate for at least 30 minutes to an hour, or better, overnight. This 3-ingredient recipe can easily be scaled up for big family and friend gatherings or for meal prepping the week ahead. This chicken is tender, juicy, and full of lemony and roast garlic flavor.

Note: Salt, pepper, oil, and oregano are staple store cupboard ingredients. Thus, they are not counted as part of the 3 ingredients.

What can I serve the dish with? Serve this dish with any steamed or roast veggies or salad of choice.

Can I use another cut of chicken? This recipe calls for skin-on chicken drumsticks, but feel free to use skin-on chicken thighs or chicken breast. The skin will help keep the meat juicy and prevent it from drying out. Discard the skin when ready to eat if you prefer.

  • Step 1

    Zest the rind of 1 lemon using the small edge of a box grater, and set the zest aside. Juice that same lemon and set aside. Mince 4 cloves of garlic and reserve the remaining cloves for later. Add the lemon juice, zest, minced garlic, olive oil, oregano, paprika, ½ tsp salt, and a good grind of black pepper to a large bowl. Stir to combine, then add the chicken drumsticks and thoroughly coat in the marinade. For best results, leave to marinate in the fridge for at least 30 minutes, or best overnight.

    Preheat the oven to 180C/350F. Dice the remaining lemon into thin rounds. Place the chicken in the baking dish evenly in 1 layer. Slip the lemon rounds between each drumstick and pour the remaining marinade over the chicken. Toss the remaining garlic cloves(with skin on) into the baking dish. The skin will prevent the garlic from burning and retain the flavor.

    Place the baking dish in the center of the oven. Roast uncovered for 30-40 minutes or until the chicken is cooked through. Timing will depend on the size of your drumsticks.

    You will know the chicken is cooked when poked with a skewer, the juices run clear, and the internal temperature reads at least 75C/165F. Garnish with fresh parsley, thyme, or a sprinkle of oregano (optional). Plate up and serve immediately.

        Hello, it's 4g net carbs/serving, however likely less as the lemons are not all consumed.
