Low Carb Avocado Coconut Ginger Smoothie

This smoothie is super simple to blend up in the morning. Cut one avocado, a little ginger, pour in some coconut milk and a few ice cubes. High fat avocado will help you to stay full throughout the morning as well as coconut milk. Make sure to buy high fat coconut milk in a can! The ginger adds a nice spiciness to help wake and get you ready for your day! Add a squeeze of lime juice if you won't be drinking the smoothie right away to prevent browning.

What kind of coconut milk should you use?

We have used canned coconut milk, typically used for cooking, in this low-carb smoothie recipe. The coconut milk is rich and creamy, perfect for adding fats and thickness to your Keto smoothie. You can use light coconut beverage or almond milk for a lighter smoothie.

Can you use add a sweetener to this smoothie?

You may use any low-carb sweetener you prefer. Please add your sweetener to taste, adjusting the quantity as needed. Please be sure to adjust your macros to account for any changes made to the recipe.

What if you don't mind dairy?

If you can consume dairy, then you can swap the coconut cream for heavy cream.

Recipe Steps

  • Step 1

    Cut the avocado in half, remove the seed, and scoop out the flesh. Place the avocado in a blender cup along with ginger, coconut milk, and ice cubes. Blend all ingredients together on high until smooth.

    If the smoothie is too thick, add as much water as needed to thin to a drinkable consistency. Taste and add sweetener if desired. Serve immediately!

        This is a great keto smoothie. It’s great to get out of the sweet habit of regular smoothies. If you need something sweeter than coconut milk or put lots of sweetener in your coffee, this smoothie is not for you. I liked the ginger too. I agree the consistency is difficult to drink. I think that just enough ice to have it cool and adding some more coconut milk or halving the amount of avocado. I also added vanilla (because I love the taste) and it was perfect for breakfast.

          Ok so this needs stevia, and the Cocao without it I would call this a smoothie.

            Gross and disgusting, even after adding cacao and erythritol. Won’t ever make again. Next time I will pay closer attention to the ratings before I make a recipe.

              It says it is low carb but the carb count is 10.2 carbs. This is not low carb. I am suppose to only have 20 carbs per the plan set up. I will not have this again unless this is a misprint.

                I’ve made this several times. I eat it out of a bowl. I always add some liquid stevia and a bit of vanilla extract. Tastes marvelous and keeps me really full. Due to fat and calorie content, I count this as breakfast and lunch. Also I think the fresh ginger makes a world of difference. I’ve tried it with dry but it doesn’t have the same kick.

                    I really like how thick & creamy this comes out (definitely needed a spoon but feels more like a proper breakfast that way) but will make a half size version next time as the fat content is immense.

                      Has anyone thought about adding the avocado a bit at a time until you got the right consistency and then adjust the sweetness to your desired taste

                        I’ve adjusted this. Half avocado 1-2 teaspoons lime 1 teaspoon fresh ginger from squeeze bottle Small can coconut milk Few drops Vanilla essence 1 tablespoon Cacao powder Half to -1 cup water Optional * scoop protein powder Much nicer consistency and flavour

                          I should also add that I only used a half avacado per serving as well, as I read in the comments that an entire avacado per serving was just way too much.

                          I made this smoothie as the recipe suggested (except I used ground ginger instead of fresh ginger root and I didn't use NEARLY as much lime juice), and didn't care for it, but added some vanilla extract, cacao powder, and a half scoop of protein powder per serving, as I made two seconds - one for me and one for my husband - and this fixed it! It's delicious! It's more like a dessert milkshake now! It's pretty thick, but I'm sure it could be thinned out a bit with some more coconut milk or a bit of almond milk, or something. Thank you so much for your suggestion!

                          I tried this with 1/2 avacado, a handful of baby spinach, unsweetened coconut milk ( has less fat though @ 4.5g rather than 12g(canned) ), 1/2 tbsp lime juice, squeeze ginger rather than fresh root, 1 tsp pure vanilla, and 5 drops liquid stevia

                          1 avocado is too much, feels like you re drinking cement. After few days i found this version ok: 1/2 avocado, 1 TBS of peanut butter and some stevia. Putting baby spinach instead of peanut is also a good healthy alternative. Better to use immersion blender to avoid air and oxidation!

                            This thing tastes horrible. It is weird to add lime into coconut milk... ever heard of the "Put Lime in the Coconut" song? I still did it since it's only 1 tbsp but that lime taste taste wrong. The consistency is so thick I had to use a spoon to eat it. However, not one to toss out food, I add some sugar substitute and toss it in freezer. This recipe is better off as ice cream than smoothie.

                              I altered it slightly. My blender stopped working and all I had was my immersion blender. I had some leftover full fat coconut milk in the fridge and half an avocado I had put in the freezer to stop it from turning brown. Cut the frozen 1/2 avocado into pieces and added 1 cup cold coconut milk, squeezed juice from half a lime and added 1 tsp Pyure and two drops ginger essential oil. ( I have a lot of essential oils I use in recipes). I also added 1 Tbsp MCT oil because I needed more fat for the day. And blended with immersion blender. This was delicious.

                                I added some sweetner and a little orange Mio flavoring. It made it really tasty. A nice, refreshing, tropical smoothie.

                                  This was so incredibly bad! I had three "sips" then had to throw out the whole thing. I think one whole avocado is way too much for 220ml coconut milk as I couldn't even get it out of the blender. Also, having avocados any other way than eating them is apparently not at all for me. Not recommended and I wouldn't make this again

                                    Way too thick and the taste was not good. Added water and still needed to eat it with a spoon. There are limes in the picture but not in the recipe. Maybe that would make it taste better

                                        I have started using sugar free vanilla syrup as the sweetener in smoothie recipes and that seem to make them more palatable- maybe that will help

                                          As mentioned in another review, this was very thick, more like a pudding or yogurt consistency. It also was not good. I only made it through half before throwing in the towel. Won’t make it again.

                                            I added 2 tablespoons MCT Oil this helped to thin it out.

                                              I don’t know where we went wrong, but this did not work out for my husband and me. The finished product was too thick. We had to use a spoon to eat it and it simply wasn’t as tasty as we had hoped. On the plus side, it was easy to make and very filling!

                                                That's a bummer! Sometimes the sizes of avocados varies and some coconut milks are thicker than others. I will adjust the recipe to include this variation. I'm sorry this happened to you!

                                                We had the same wxperienc
