  • Step 1

    Preheat an oven to 375 degrees. In a mixing bowl, mix together all the ingredients except the poblano peppers to make the meatloaf.

    Prepare 2 poblano peppers by slicing away the tops and removing the seeds.

    Use a spoon to stuff each poblano with the turkey meatloaf filling. Make sure to press the meat into the base of the peppers, but don’t pack it too densely. Set the stuffed peppers in a glass baking dish.

    Cover the dish with foil and bake for 30 minutes. Then, remove the foil and bake for 10 more minutes. Serve after cooling for a couple minutes.

    This sounds delicious! I'm just wondering if the nutritional info is for one pepper or for the entire recipe? 5.4 gm carbs sounds high for one pepper

      1 serving is 1 stuffed poblano. Each serving has 3g carbs, 22g fat, and 30g protein.
