  • Step 1

    Prepare 4 slices of red bell pepper that are about 3 inches tall from 2 large peppers. Slice away the tops and bottoms, remove the cores, and slice each pepper into 2 pieces to yield your 4 total pieces. It is important that both sides of your pepper pieces have clean cuts and flat bottoms. Place the peppers down in olive oil in a medium sized skillet and turn the heat to very low.

    In a bowl, whisk together the eggs, cream, salt, and pepper.

    Pour the egg mixture into each piece of bell pepper. Since not all bell peppers are the same shape, some may look more filled than others. Make sure each piece of bell pepper gets the approximate equivalent of 1 egg. Sprinkle the bacon bits and shredded cheddar evenly over each portion so they fall into the egg mixture.

    Place a lid over your skillet and turn your heat up to a medium or medium-low. Cook the skillet for up to 10 minutes or longer until your eggs are cooked through and your peppers have a charred bottom. You can adjust the heat as necessary or add more olive oil to your skillet to avoid burning. Use a spatula to slide the cooked peppers out of your skillet and garnish with something fresh and bright, such as chopped green onion, parsley, or chives.
