Keto No Dairy Eggnog

If you like your eggnog traditional and simple, make this Keto almond milk eggnog. This non-dairy recipe removes thick cream and leaves just the eggs. Instead of heavy cream, you’ll use almond milk, which makes a lighter holiday beverage. The flavorings are simple, and the end result tastes just like any other eggnog you’d enjoy from the store. Although liquor does not carry any carbohydrates, this recipe does not include alcohol. It’s entirely optional for you to add alcohol or a rum extract to the Keto eggnog, which is directed in the steps below. Share this eggnog with friends warm or chilled!

What alcohol goes into eggnog?

Eggnog is traditionally made with bourbon or rum. Make sure to choose plain liquor (no flavored or spiced rums). However, you may include other light or dark spirits depending on your tastes and alcohol tolerance. If you like the subtle flavors of rum, use rum flavored extract instead of alcohol for a virgin recipe.

Flavoring a basic eggnog recipe

Remember, this is a simple Keto eggnog recipe that can be modified or added to. If you want to make the eggnog sweeter, add liquid stevia drops. You can add other spices or integrate any traditional family recipes. Other low-carb non-dairy milk includes coconut, soy, and oat milk.

    Make sure your egg yolks are clean of any whites before adding them to a mixing bowl fitted with a whisk attachment. Whip the egg yolks at a high speed for several minutes; perhaps 5-7. Look for a light pale yellow and thickened yolks. Then, whip the powdered erythritol into the egg yolks, continuing until the sweetener dissolves and the eggs are thick and pale.

    Add almond milk to a medium-sized pot and begin heating it on the stove. Once the milk reaches a simmer, immediately take it off the heat. Turn your stand mixer back on to whip the egg yolks at a slow speed while you temper the eggs with the hot liquid. Pour a small amount of hot almond milk into the eggs while they’re whipping, then gradually add more until all the milk is poured in.

    Whip the hot liquid to release some of the steam. Then, pour all of the liquid back into your pot. Return the pot of eggnog to the stove, and season the eggnog with salt, nutmeg, clove, and vanilla extract. If you’re including alcohol or rum extract, also include it at this point. Continually stir and heat the eggnog over medium heat until the beverage reaches 150 degrees Fahrenheit, then set the eggnog aside to cool for drinking.
