Keto Lemon Asparagus Wrapped in Salmon
This delicious Keto asparagus recipe makes a tasty snack or side, loaded with flavor and healthy fats. Our low carb dish is prepared with fresh asparagus spears, zesty lemon juice, creamy mayonnaise, and decadent smoked salmon. The asparagus is simply oven-baked with a little oil and lemon juice until perfectly tender, then wrapped in slices of salmon. Once prepared, the asparagus bundles are served with a simple lemon mayonnaise for dipping.
What Kind of Mayonnaise Can I Use?
We have used store-bought mayonnaise for this Keto snack recipe. When buying shop-bought mayo, look for plain options that are minimally processed and do not contain added sugars. Asparagus
10 large - spear - 7 1/4" to 8 1/2" long
Smoked salmon
3.5 oz
Lemon juice
1 tbsp
Extra virgin olive oil

Mayonnaise

Step 1
Preheat the oven to 400 degrees Fahrenheit and line a shallow oven tray with baking paper. Trim the tough ends from the asparagus and discard. Arrange the asparagus spears across the lined oven tray. Sprinkle with salt and pepper. Drizzle over a tablespoon of the lemon juice and olive oil. Mix well to coat. Transfer the asparagus to the oven. Bake for 8-10 minutes. The asparagus should be tender and cooked through.Step 2
Remove the asparagus from the oven. Slice the salmon into 5 even-sized portions. Take a piece of salmon and wrap it tightly around two of the asparagus spears towards the base. Repeat with the remaining salmon and asparagus, so you have 5 salmon-wrapped bundles.Step 3
Add the mayonnaise to a small bowl. Add the remaining lemon juice and a pinch of black pepper. Whisk together until smooth. Serve the mayonnaise alongside the wrapped asparagus for dipping.
