This breakfast Keto recipe can also make a yummy lunch or a fun breakfast-for-dinner! Frittatas can be enjoyed any time of day, depending on what you put in them. This savory dish is made with sauteed kale and juicy bacon. The simple ingredients make it easy for you to modify and add more ingredients that you like to the recipe! The recipe is also simply seasoned, so feel free to add more spices that you enjoy with your eggs. Enjoy a slice of the cooked frittata as is or pair it with another Carb Manager breakfast recipe for a larger meal.

Kale substitutes

Kale can be substituted with other dark, leafy greens. Use spinach, mustard greens, or bok choy in place of kale. If you find kale to be too bitter, use extra salt. If you find it to be too tough to chew, you need to cook it down for longer.

Leftovers

If you have leftover frittata, cut and divide the portions amongst Tupperware containers. Keep the frittata stored in your refrigerator for up to 3 days. Simply reheat the frittata in your microwave when you’re ready to eat it!

Other ingredients to add

You could certainly add more than bacon and kale to your frittata. Try mushrooms, diced bell peppers, onions, celery, or other low-carb vegetables. If squash is in season, diced zucchini or summer squash would work quite well. Instead of bacon, try adding ham, pancetta, or salami to your frittata.

  • Step 1

    Preheat an oven to 400 F (200 C). Slice bacon into lardons or small strips. Saute the bacon in a medium oven-proof skillet until browned. Pour off all oil except for approximately half of a tablespoon.

    Add kale to the skillet and saute for 1 minute. Stir the ingredients continuously to coat them in the bacon fat. Add ¼ teaspoon of kosher salt.

    Whisk the eggs together with another ¼ teaspoon of salt in a separate bowl. Pour the eggs on top of the bacon and kale, and swirl the pan to make sure the egg is in an even layer. Top with shredded cheese.

    Transfer the skillet to your oven. Bake for 15 minutes or until done. Look to make sure the egg is puffy and golden on top for doneness.

        This is delicious! Used spinach instead of kale and 4 cheese mix instead of just cheddar. One serving is filling! Had 2 pieces leftover and forgot about them until days later. Reheated in a frying pan with some olive oil and omg so good!! A keeper for sure!

            Serving was spot on. This recipe makes 4 servings so I just cut the frittata into quarters (cut into 8 for the "2 slices per serving"). I did add extra bacon and cheese though to hit my macros. Would be good if we could edit recipe in the app. Oh and how much fat should I have got from 4/5 slices of streaky bacon? I'm in the UK and there was hardly any excess fat. And I also swapped kale for spinach. I'm another kale-refuser. Still tasty and enough for next few days.

              Trying to understand the serving size. It says: 'Serving Size: 1-½ Servings (2 slices each)." Does that mean that I'm supposed to eat 3 slices? Are slices quarters? Help!

                Sounds like it's first cut into quarters and each quarter is cut in half to make 2 slices. I would just cut into quarters and eat a quarter... I'm sure it's going to taste the same!

                I think 2 slices is 120g so use a scale to sort the serving sizes. Hope that helps.

              My bf refuses to eat kale, so I sub spinach or arugula. Silly, I know.. but it’s one of only 4 foods he won’t eat: no chocolate, no peanut butter, no kale and no tomatoes.

                        I used spinach instead of kale, feta instead of cheddar, four pieces of bacon, added two diced peppadews and baked it for less time and shared it with my husband. It was really good!! By reducing the amount of eggs, it made two servings which I was what I wanted.

                              I making a version of this now with prosciutto, spinach and a Gruyere -Swiss blend. I also added a tablespoon of sour cream into the eggs. It smells so good in my house right now. I can’t wait to pop it in the oven!

                                  Loved it! No substitutions and just followed directions. It was simple and really tasty! Looking forward to saving leftovers for breakfast for the next couple days. I also think this makes for an impressive and pretty breakfast to serve guests if you’re entertaining. I’ll definitely be making it again!
