Ingredients
Zucchini
1 medium
Lemon Juice
½ each - juice from one lemon
Olive Oil
2 tablespoon
Feta Cheese
2 tablespoon, crumbled
Pine Nuts
2 tablespoon, whole pieces
Peppermint, Fresh
2 tablespoon
Salt, Sea Salt
¼ teaspoon
Black Pepper
⅛ teaspoon

Step 1
Peel the zucchini and carefully slice into 6 strips lengthways about 1/4 inch thick.Step 2
Brush the zucchini all over with the oil and lemon juice and season with salt and pepper.Step 3
Heat a griddle pan over a medium / high heat and add the coated zucchini strips. Cook for 2-3 minutes on each side until tender and charred.Step 4
To serve, crumble the feta over the zucchini and scatter with pine nuts, chopped fresh mint and a drizzle of olive oil.
