Ingredients

  • Step 1

    Preheat an oven to 350 F. Cream the butter and sweetener together until light and fluffy in a stand mixer. Add the egg and mix until well combined. Add the almond flour and vanilla extract.

    Chill the dough for at least 1 hour in the refrigerator.

    Fill a standard cookie press with the dough and use the cookie press according to it’s instructions. I used the tree, square and a round stamp for my cookies. The cookies do not spread so you can place them close together on the baking sheet. Chill each tray of cookies for 5 minutes before baking.

    Bake cookies for 8-9 minutes or until very lightly golden brown. Be sure to allow them to cool completely on the baking sheet before removing them to a cooling rack.

    This didn’t work at all, too thin and the swerve leaves an aftertaste and this recipe doesn’t have any flavor ( pb, chocolate, etc.) to cover it up. Not going to make these again.

    I dont know what I did I had six kids in my house that day but I completely screwed this up. The batter tasted great but as a dough it seemed difficult to work with then when I cooked it it's like it melted. I did try to use the swerve confectioners tho.

      There ok. I won’t make them again because they do fall apart and tasted very greasy. I did not put them in a cookie press instead I rolled them in a ball and pressed them down lightly with a fork. They say that there 0 net carbs. I had 3 and carb manager programmed 2 net carbs so not sure if it’s accurate.

          Shapes did not keep, came out flat, Flavor was good, but I am very disappointed, especially while following the instructions, except I used Stevia.
