Low Carb Colossal Chocolate Chip Cookies

These chocolate chip cookies are gigantic! Grain-free and full of healthy fats, this would make for a great breakfast and a killer dessert. Cookie dough batter is creamed together using coconut oil and mixed nut butter and then stuffed full with walnuts and chocolate chips. They are then baked to perfection, crispy on the bottom and soft and gooey in the center. Be sure to let the cookies cool completely before removing them from the cookie sheet after baking.

  • Step 1

    Preheat an oven to 375 F. Cream together the coconut oil, mixed nut butter and sweetener together until creamy about 1-2 minutes. Add in the eggs and vanilla then cream until well combined, scraping down the sides as necessary to incorporate it all.

    Add in the almond flour, baking powder, and coconut flour until combined.

    Add in the walnuts and chocolate chips. Mix until well disbursed.

    Bake for 10-11 minutes. Remove from the oven and allow to cool 5 minutes before removing from the baking sheet.

    These cookies were a hit with the family. I made 15 very generous sized cookies. Which meant I had to eat only half a cookie to ensure I stayed within my daily carb count. Next time I’ll make them a little smaller.

      I found 10 cookies were too big. I ended up with 18 and counted as half a cookie

        I prefer the recipe for Choc Chip Cookies from the Keto Sweet Tooth Cookbook by Aaron Day. It is without the nuts so fewer carbs and Y are delish. Be sure to use SUPER FINE almond meal when making it. I add a scoop of marine collagen and a tablespoon of flax to the recipe to add beneficial value. Try it! ( 1 cookie = 168 c. 17 g. Fat/ 1.4 Net carb. / 3.5 protein )

          Carbs could be cut a little by cutting back on chocolate chips (even in regular chocolate chip cookies I've always use half the recommended chips) and swapping pecans for the walnuts.

            Way too many carbs. At that rate, I'll just eat a normal cookie, then go for a jog.

              There are 18.8 grams of sugar alcohol!!! You can only deduct 5 sugar alcohols per serving. But if you deduct the 5 and the 7.1 grams of fiber you come up with the net carb total. It is scary when you first see the numbers. Just half the cookie size.

                Something must be amiss with the nutrition info... 525 calories and 32 total carbs per COOKIE? Why is this even listed on a low-carb app? Looks like I can cross this one off my list.

                  It says 31.4 net carbs per pound... so depends how large you make your cookies
