    Dice the cherry tomatoes in half, finely chop the scallion, and set them aside. Crack eggs into a microwave-safe bowl. Add the almond milk and beat with a fork. Add the tomatoes, scallion, spinach, mozzarella, and a pinch of salt and pepper to taste. Thoroughly combine all the ingredients together.
