How do I ensure ultra-crispy, golden-brown fries?

The trick to ultra-crispy, golden-brown fries is to julienne the squash very, very thin, and in uniform sizes. To achieve this is half the acorn squash and remove the seeds. Slice the acorn squash into thin slices (about ¼” or less thickness). Cut each slice, so it is more square before cutting it into ¼” or less thick julienne strips.

What if I don’t have an air fryer?

If you do not own an air fryer, you can use a conventional oven set at a higher temperature like 400 F. Cook them until golden-brown and crispy (this will most likely take longer than the amount of time the recipe calls for), so keep an eye on them and don’t be afraid to give them extra cooking time.

    Remove as much of the skin from the acorn squash as possible if the skin is thick. If the skin is not thick, you can leave the skin on just be sure to wash the skin well.

    Cut the squash in half lengthwise.
