Recipe Steps

  • Step 1

    In a bowl, combine the ground chuck, salt, pepper, onion powder, paprika, caraway seed, egg, and parmesan.

    Press the meatloaf into a crock pot. Pack it down gently to fill the whole basin without making the meat too dense. Then, use a toothpick or skewer to create several holes through the meatloaf. This helps the cooking consistency and avoid shrinking.

    In a new, small bowl, combine the remaining ingredients into a sauce. Spread the sauce over the entire top of the meatloaf.

    Cook the meatloaf on high heat for 4 hours. This gives enough time for the edges to turn a dark golden brown.

    Once the meatloaf has finished cooking, slice it in half lengthwise, then slice it into 5 sections, making 10 pieces total.

    Meatloaf was good. Cooked in 1hr 15 minutes on high. I decided to check early due to all the other reviews. I cooked in an 8qt slow cooker. Times may vary due to surface area covered.

      This was meh. It needs so many and judgments. The flavor is good but dry and we even added an extra egg. It was burnt at 3.5 hours that we had to cut the whole bottom off and that was with 1.5 lbs of meet. A longer time at a lower setting would much benefit this. Making a regular diet adapted meatloaf in the oven is simply just better.

        Recipe was great. Forgot to put on sauce before cooking. But still turned out good. Cooked in instapot for 25 minutes manual. Was 200 degrees when it came out. Will try it at 20 minutes next time.

          I loved this recipe! I did make some changes though. 1. I doubled the recipe. 2. I cooked it in the crockpot for 3 hours on high. 3. Afterwards, I added some glaze (made of Mayo, Ketchup, garlic powder, salt, pepper, and Swerve Brown Sugar) to the top and broiled it. You can use some of the same glaze as a dipping sauce if yours comes out dry and you’ll never know! I accidentally heated up leftovers for too long and they were still good.

            Purée some broccoli and spaghetti squash (doesn’t need much) and hand mix it in to make it less dense and more juicer. It’s all good carb and fiber. Add soy sauce instead of salt, and even some spicy Korean pepper paste to give it that flavorful spicy taste!

              This is tasty and it’s low in carbs. But I made it in a cast-iron skillet I may have cooked a little too long so I had to add some sugar-free ketchup to eat it with.

                    I made this in my instant pot and it was so delicious! Hubs yet said it was the best meatloaf he has EVER had!

                        I do mine in my instant pot. So much faster. 40 minutes manual. I also add cayenne for a kick and smoked paprika. Comes out moist and delicious every time!

                        Very good, easy and quick to do the prep. I bet it would be even better if the mix would sit in fridge overnight prior to cooking.

                          Very good and flavorful but the meatloaf was very thin. Next time,I will double the amount called for. I cooked in the crockpot on high for 2 1/2 hrs and it was done without being dry.

                            This is not good. We've tried twice and both times it has not come out well. It is very thin and dense. And the sauce is not to your liking-very rye. Even 3hrs in Crock-Pot is far too long.

                              Try using your oven, doubling up, and/or making small modifications to ingredients or the sauce like other users. Read below for ideas. :)

                            Delicious! I used hot Hungarian paprika, which made it fairly spicy (almost over the top, but I like spicy). I tripled the ingredients, so increased the bake for 375 / 30m guideline to 45 minutes. Should I pour off the liquid or will that keep it moist?

                              I would suggest pouring off excess liquid after cooking. If you store leftovers with liquid, it may lose some integrity. Hope this helps!

                            My Crock-Pot on high torched this thing after 4 hours. Do it in something like an 11x8 1/2 baking dish with a lid in the oven at 375 degrees for 30 minutes.

                              Well I misread and added all the ingredients to the meat. I will let you know how it turns out. FYI, did cook in the oven and added ketchup to the top of 1/2 for the last 5-7 mins for hubby.
