Step 1
Slice the cherry tomatoes in half. Grease a frying pan with olive oil and heat up over medium heat. Add the sliced tomatoes and cook for 2-3 minutes per side.Step 2
Move the tomatoes to one side of the pan using a rubber spatula or a wooden spoon. Add the butter and allow it to melt completely. Crack the eggs into the pan and season with salt, pepper, and dried parsley. Continue to cook until the yolks are fully set.Step 3
When done, transfer the eggs and tomatoes to serving plates. Add the sliced brie cheese and arugula. Optionally, season with some more salt or pepper to taste and serve immediately.
