  • Step 1

    Preheat the oven to 400 degrees Fahrenheit.
  • Step 2

    Clean the okra and cut off the tops and tips. Carefully run a sharp knife lengthwise down each okra, taking care not to slice all the way through.

    Finely slice the scallion and add to a mixing bowl with the cream cheese, spices, and tomato purée. Mix together well to combine.

    Carefully prize each okra open and stuff with equal amounts of the cream cheese filling.

    Slice the bacon strips in half and wrap a half around each stuffed okra.

    Transfer to the oven to bake for 23 - 25 minutes until cooked through and the bacon is golden brown.

    If you love okra like I do these are a great variation to jalapeño poppers. I always par cook the bacon a little so it gets nice and crispy. I added cheddar cheese and jalapeño to the cream cheese and omitted the tomato purée.
