Low Carb Easy Chicken Bacon Cucumber Pinwheels

Make these delicious Keto chicken and cucumber pinwheels as part of your lunch or a snack. You can even make the pinwheels in bulk to serve as an appetizer or finger food to a group. This family-friendly recipe can be enjoyed by adults and kids. A Keto tortilla is filled with cream cheese, dijon mustard, cucumbers, chicken, and crispy bacon. When you slice the tortilla into pinwheels, they make the perfect bite-sized pieces for eating. Store leftover pinwheels in your refrigerator for up to 24 hours. Note: after 24 hours, the moisture from the cucumbers may start to spread to the other ingredients.

What types of tortillas are Keto?

On the Keto diet, wheat flour or corn tortillas have too many carbohydrates. However, some brands now produce Keto-friendly tortillas made with almond flour and far fewer carbohydrates per serving. Look for the words ‘Keto’ or ‘Low Carb’ specifically on the packaging. On the nutrition label, each tortilla shouldn’t be more than 4-6 grams of net carbs.

Is mustard Keto?

Mustard is a Keto-friendly condiment that can be very useful on the Keto diet. Most mustards are gluten-free and low in carbs. Double-check the nutrition label on any mustard you’re using to avoid unapproved sweeteners or sugar substitutes, depending on the type of mustard you choose. Use mustard as a normal condiment on the Keto diet or use it as a marinade or in sauces and dressings.

Other ingredients to add

There’s room to spare to add other ingredients you like to your Keto chicken and cucumber pinwheels. If you like cheese, add your favorite slice of deli-style cheese to the pinwheels so it’s easy to cut. Some Keto-friendly vegetables that can be added to the pinwheels are celery, tomato, lettuce, or mushrooms.     If necessary, warm your tortilla beforehand to make it easier to roll later. Spread cream cheese across the tortilla, but leave a little space around the edges so the cream cheese doesn’t squeeze out the ends later. You can bring the cream cheese to room temperature to make it easier to spread too. Drizzle dijon mustard across the cream cheese.

    Instead of cutting a cucumber, peel long strips from a whole cucumber using a vegetable peeler. You should need just 4-5 strips of cucumber for one serving. After weighing the strips of cucumber, lay them horizontally across the cream cheese on your tortilla.

    Lay whole slices of deli-chicken breast on top of the cucumber. Cook two strips of bacon on your stove until they’re crispy in a skillet. Then, you can lay the crispy bacon on top of the chicken breast. Roll the tortilla up into a tight roll, then slice the tortilla into pinwheels.
