    Season the chicken breasts with ½ tsp each of salt and pepper and set aside. Thinly slice the onion, mince the garlic, and roughly chop the sundried tomatoes into ½ inch pieces.

    Add the olive oil to a nonstick pan over medium heat. Once the oil is heated, add the chicken and cook for about 3 minutes per side or until golden brown. Transfer the chicken to a plate.

    To the same pan, add the butter. Once melted, add the onions and sauté for 2-3 minutes. Add the minced garlic and cook for 30 seconds. Add the chicken broth, sundried tomatoes, paprika, heavy cream, salt, and pepper.

    Drop the heat to low and return the chicken to the pan. Bring to a simmer and then reduce the heat to medium-low. Cook until the internal temperature of the chicken breast reaches 165°F/74°C.

          This recipe was absolutely delicious… I did add 1/8 of a cup of a dry white wine and then reduced the sauce. That added a negligible amount of calories and carbs to the entire recipe. My husband asked that I keep this in the rotation so that’s a plus for me.
