    Scramble your eggs in a small mixing bowl. Season the eggs with some salt and pepper. You can add additional seasonings at your discretion at this point.

    Add in the heavy cream and the shredded cheese. Mix it well with a small whisk or a fork. Make sure the cream is well incorporated as this will add some air to the mixture to ensure it is light and fluffy.

    Choose a ceramic or heat-safe mug that is at least 10-oz for one serving. Fill the bottom of the mug with whole or chopped spinach leaves of your choice. Pour the egg mixture over the spinach in the mug.

    Microwave your mug on high heat for 30 seconds. Stir the ingredients inside the mug. Then microwave on high heat for another 1 ½ minutes, adding 15 more seconds at a time if necessary until the egg is cooked through.

            Easy fast to make. I recommend stirring the mixture every time you check on it during microwave process. Allows the eggs to cook easier and avoids the softness in the middle that results in a heavy rubbery tasting outer part. Yum yum

                                Yes! My thoughts exactly! You can still nuke it, but in a shallow bowl with a flat bottom. Put 2 tsps butter in first to sauté the veggies to the point you want them cooked according to your own liking. You can sauté in the same microwavable dish but take the veggies out of the dish first before pouring in the egg mixture, not only for an omelette aesthetic but for a better cooking process. Use 1/2 tsp of cold or room temp butter to grease your ad-hoc omelette dish, add egg mixture and microwave for 30 seconds. Gently stir and add time in small increments poking with a fork to guide the less cooked egg to the outsides of the dish until the eggs are set but not all the way done The egg at the top will be shiny. Add your cooked meats and sautéed veggies and too with cheese Microwave another 30 seconds to melt the cheese and to finish cooking the eggs. Let sit covered in the microwave for 1 minute.
