Keto Chicken Stuffed with Blue Cheese Spinach and Bacon
These Keto stuffed chicken breasts are loaded with flavor from salty bacon to tangy blue cheese and aromatic chives.
As the chicken itself is so packed with flavor these need only be served with a simple green salad or some steamed and buttered green vegetables.

Ingredients
Boneless Chicken Breast
2 medium - split
Bacon
3 slice - 6" long
Olive Oil
2 tablespoon
Baby Spinach
1-½ cup, cut pieces
Chives
1 tablespoon, cut pieces
Garlic
1 clove
Blue Cheese
½ cup, crumbled
Recipe Steps

Step 1
Preheat the oven to 400 degrees Fahrenheit. Heat 1.5 tablespoons of olive oil in a pan over a low/medium heat. Mince the garlic and add to the pan cooking gently until tender.Step 2
Add the spinach to the pan and cook briefly until just wilted. Remove the spinach and garlic from the pan and set aside.Step 3
Roughly chop one rasher of bacon and add to the pan, cooking through until golden brown.Step 4
Squeeze any excess liquid from the spinach and add to the pan along with the bacon and stir to combine. Remove from the heat and stir in the blue cheese and chopped fresh chives. Set the mixture aside to cool completely.Step 5
Whilst the mixture cools, carefully run a sharp knife along the side of each chicken breast creating a pocket for the stuffing. Be careful not to cut all the way through the chicken.Step 6
Once cold, divide the stuffing mixture evenly between each chicken breast, completely filling the pocket.Step 7
Wrap one rasher of bacon around each chicken breast to contain the stuffing and seal closed with toothpicks.Step 8
Place the chicken on a shallow oven tray and drizzle with the remaining oil. Bake for 22-25 minutes or until completely cooked through and the juices run clear.

I sustituted thighs instead and i found the blue cheese too salty with the bacon so might use fetta next time as some have suggested. Thanks for thr 'my recipes' tip queenp ive often wondered how to alter the amounts. Nice alternative meal. Had with cauliflower rice. Beautiful.

So yummy! I used thighs instead of breasts and broiled it on both sides at the end for 2-3 minutes to crisp up the bacon. Meat stayed nice and tender and it was delicious!

Maybe my chicken breasts were too big but it seemed like the bacon was done before the chicken so I pulled it off and cooked the chicken a little longer

Was tasty. I think I Try substituting feta cheese as well next time I like blue cheese, but I did find it a bit overpowering

My husband LOVES this and he’s not doing keto at all. It’s so delicious. I sub feta for the blue cheese (because we don’t like it) and was wondering how it changed the nutrition info. I’ll be trying to figure it out on my own but if anyone has already done the math, please share! :)

If I sub something and want to know the math, I “recreate” the recipe (I just don’t post to dashboard) but then I can choose the actual ingredients I used. A bit of legwork, but helps keep my daily totals accurate.

Delicious, though I substituted Mediterranean Feta for the blue cheese as we were out of it. It was excellent! Simple, quick meal.

I love this so much! One of my favorite "go to" keto recipes. I agree that it tastes gourmet. I subbed feta for blue cheese once because it was all I had. It was definitely different, but it still tasted great.

I have made this several times, I changed the cheese to shredded Mexican blend instead of blue because they don't like blue as much. They love this dish
