Step 1
Preheat the oven to 300 degrees F. Arrange approximately 1 slice of Keto bread per serving on a sheet tray, and place the tray in your oven to bake for about 30 minutes (depending on how many servings you’re making). Allow the lightly toasted bread to cool until you can touch it, then cut the toasted bread into cubes. Rearrange the bread cubes on your sheet tray, and return them to your oven to bake for another 10 minutes or longer. Bake the bread cubes until they turn into toasted Keto croutons that are firm all over and golden.Step 2
When the bread has cooled down, make the sausage for the stuffing. Break up raw ground pork sausage in a pan over high heat on a stove. Season the pork with seasoned salt, white pepper, mustard powder, onion powder, garlic powder, thyme, and rosemary. If necessary, you can add olive oil to the pan. Once the pork has browned, you can reduce the heat and finish cooking the pork until it’s golden brown all over and crumbled into small pieces.Step 3
Leave the pork sausage aside to cool. Add ½ cup of Keto croutons per serving to a large mixing bowl. Toss the croutons with all the extra virgin olive oil, salt, pepper, and dried oregano until they pick up all the oil and spices. Add diced celery, mushroom, ground flaxseed, and finally the cooled ground pork to the bowl, and toss all the ingredients together one final time to finish the stuffing mix.Step 4
Turn on an oven to preheat to 350 degrees. Spray a baking dish with pan spray before transferring all the stuffing to the dish. Pack the stuffing down to fill the corners and any empty spaces, and then pour the chicken broth over the stuffing. Cover the dish with aluminum foil and bake it in your oven for at least 45 minutes or until all the croutons are soft. At your discretion, you can cook the stuffing for longer under a broiler to brown the top and edges. Let the stuffing cool for 5 minutes before serving.
