Keto Jumbo Skillet Meatballs

Who wouldn’t love a jumbo-sized meatball filled with melted cheese? This Keto ground beef skillet recipe is great as a main course for your lunch or dinner, as meal prep, or as part of a meal to feed a whole family. Ground beef is mixed with a couple of special Keto ingredients to incorporate more fat into your meal. Then, the meatballs are stuffed with provolone cheese before being added to a skillet. First, you’ll brown the meatballs on the stove, then you’ll finish them off in the oven. Each meatball has to be eaten in three or more bites and is filled with a gooey hot center.

Are pork rinds Keto-friendly?

Pork rinds are pieces of fried pig skin that are salted or seasoned. Whether or not you like pork rinds as a snack, they are wonderful to use on the Keto diet. Pork rinds are high in fat and have zero carbs. If you don’t want to eat them plain, grind up pork rinds and add them to your meats as filler or breading!

Do I need a cast-iron skillet?

For this recipe, you’ll be transferring your Keto ground beef skillet to the oven. You need a skillet that will be safe to use in high temperatures. In most cases, a cast-iron skillet fits these needs. Cast-iron skillets are also very good for ensuring even cooking meats thoroughly.

Clever ways to enjoy this recipe

You could eat the jumbo meatballs as they are and include a side dish. However, you can get more creative than that. Of course, meatballs are great on top of pasta. You can choose spiralized veggie noodles or shirataki noodles on the Keto diet. Cut a jumbo meatball over a large salad, or enjoy one in a bowl of soup.

    First, grind whole fried pork rinds in a food processor or blender until they make a fine crumb. It’s best to grind a large number of pork rinds, then weigh out the amount you’ll need. Add the ground pork rinds in the proper weight to a large mixing bowl along with ground beef, mayonnaise, seasoned salt, pepper, mustard powder, onion powder, and garlic powder. Mix all the ingredients together until your meatball mixture is formed.

    Divide the meat mixture into as many servings as you’re making, and form each portion into a large meatball. Take each slice of provolone cheese and fold it into quarters. Fill each meatball with cheese by flattening the meatball, adding four quarters of cheese to the center, then folding the meat back over the cheese and into a meatball again. Repeat the process for all the meatballs.

    Start heating avocado oil in a cast-iron or oven-safe skillet. Preheat your oven to 350 F (180 C). Once the oil in the skillet is steaming, add the stuffed meatballs to the skillet. Brown the meatballs on all sides and let them turn lightly golden on the outside as well.

    Once the meatballs are browned and the oven is preheated, transfer the skillet of meatballs directly to the oven. Cook the skillet meatballs for 10 minutes or until done. The cheese will have melted and may have burst out of the meatballs a little. You can also use a meat thermometer to test the meatballs for doneness.
