    Canned Tuna

  • Mayonnaise

    Mayonnaise

    1 tablespoon

  • Red Pepper

  • Cilantro

    1 tablespoon, chopped

  • Lime Zest

    Lime Zest

    ¼ Zest of 1 small lime

  • Salt, Sea Salt

    ¼ teaspoon

  • Black Pepper

    ⅛ teaspoon

  • Step 1

    Slice the cucumber into 4 even segments. Taking a sharp knife, score around the center of the cucumber and scoop out the seeds, being careful not to cut all the way through the cucumber.

    Finely dice the red pepper. Add the tuna, mayonnaise, red pepper, lime zest, cilantro, salt and pepper to a mixing bowl. Stir well to combine.

    To serve, divide the tuna mayo evenly between the hollow cucumber cups.

    My whole family loved this recipe. Definitely going to add it to our list of favorites. After draining the can, I had 5 oz dry weight of tuna, so I scaled the recipe to make 10 servings. I had a hard time with the paring knife to make the cucumber cups. Using the pointy end of a vegetable peeler made the job easy for me. To get the precise macros for my meal, I changed the serving size in the recipe to “gram” and entered the weight of the pieces I intended to eat.

      It tells you that the recipe makes 4 servings, 1 quarter is considered 1 serving. 1.1 net carbs per serving. Hope this settles any confusions.

        I ended up cutting the cucumber circles in half and using them more like a chip. I found it was easier to eat this way.

                  You can scoop the middle of the cucumber out with a spoon. Knife not required.

                    Im confused on the serving size. Is it 1/4 cucumber filled? I changed serving size to 8, and it still only calls for 1 can of tuna and 1 single cucumber.. help!

                      For 1/2 can tuna you use 1 European cucumber, cut into 4 sections. For whole can tuna, use 2 European cucumber
