Keto Spanish Cauliflower Rice
Spanish cauliflower rice is full of smoky flavor, is a little spicy, and is a tad crunchy too. This recipe has the perfect amount of sauteed onion, carrot, and jalapeno to enhance the flavors of the spiced cauliflower rice. A generous sprinkle of fresh cilantro and a squeeze of lime juice makes the side dish vibrant and pretty to look at too!

Ingredients
Yellow Onions
⅛ cup, chopped
Carrots Raw
¼ cup, chopped
Jalapeno Peppers
1 pepper
Butter
1 tablespoon
Cauliflower Rice
2 cup
Salt
¼ teaspoon
Spices Paprika
½ tsp
Spices Cumin Seed
¾ tsp
Cayenne Pepper
¼ tsp
Cilantro, Raw, Coriander Leaves
1-½ tablespoon
Lime Juice Raw

Recipe Steps

Step 1
Prepare the ingredients by dicing the onion, carrots, and jalapeno into tiny pieces. Melt the butter in a wide pan on medium heat, and toss in the veggies. Cover the pan and cook for about 5 minutes, or until the ingredients are tender.Step 2
Stir in the cauliflower rice, salt, paprika, cumin, and cayenne. Cook the ingredients, uncovered, until the “rice” is soft and hot - about 3-4 minutes.Step 3
In the last stage of cooking, chop and stir in the cilantro. Transfer the Spanish cauliflower rice to a serving dish, and squeeze fresh lime juice over it. Enjoy!

This gave me an idea for my own spicy rice! No carrot or jalapeno; used yellow bell pepper and zucchini and added added a tablespoon of srachira instead of the spices. Viola!

You could include tomatoes at your discretion. Please note that 1 serving of this recipe is already 7g carbs.

This is great swapped carrot for red bell pepper & added garlic. cayenne & red chilli. Its lovely!

I left out jalapeno and used 2 dashes of cayenne pepper, I also lightly browned the cauliflower rice in butter. Delicious and filling!

The carrots only account for 2g carbs in the whole recipe. Hope this helps!

Vegs burned, very spicy, so use a small pepper (mine was at least 2 inches) and scrape out the seeds
