Love eggnog, but you’re in a pinch for time? Make a batch of this no cook Keto eggnog recipe in 10 minutes. The chilled drink tastes refreshing and sweet over a glass of ice. Even though the eggnog isn’t cooked, it still has a thick and creamy texture. You’ll find this recipe a little less savory and more on the dessert side of flavors. Otherwise, you’ll taste traditional notes of nutmeg, clove, cinnamon, and a hint of vanilla. Please note that eggs are still used in the recipe. Is This Safe For Me To Drink?
Even though this no cook Keto eggnog has eggs in it, it is safe to drink provided you factor in any individual health cocncerns. Raw eggs are safest when consumed cold, which is why the drink is served chilled. As long as the drink is kept below 35 degrees Fahrenheit, you should not get a foodborne illness, but please use your own discretion and note the below disclaimer. Not cooking the eggnog doesn’t leave a stronger egg taste - it tastes just like sweet eggnog you’d buy at the store!
Can I Add Alcohol To The Eggnog?
There is no alcohol included in this Keto eggnog recipe, but the steps below advise when you may add alcohol. Traditional eggnog has bourbon or rum in it, which doesn’t have carbohydrates. If you don’t want any alcohol, you can use rum flavored extract instead. Since the alcohol won’t be cooked, the taste may be a little stronger than you’re used to.

Step 1
Make sure your egg yolks are clean of any whites before adding them to a mixing bowl fitted with a whisk attachment. Whip the egg yolks at a high speed for several minutes; perhaps 5-7. Look for a light pale yellow and thickened yolks. Then, whip the brown sugar substitute into the egg yolks, continuing until the sweetener dissolves and the eggs are thick and pale.Step 2
At a slower speed, whip the almond milk and heavy cream into the stand mixer. You can add the remaining ingredients as well. If you are including alcohol in the eggnog, do NOT add it yet. Whip all of the ingredients at the highest speed you can for 4-5 more minutes. Watch for the mixture to thicken slightly, as the cream will actually whip somewhat. Plus, the extra air you’ve incorporated from whipping makes the eggnog thick and creamy.Step 3
If you are including alcohol in the eggnog, now you can whip it into the mixer. To serve the eggnog, fill a glass halfway with ice. Pour 4 ounces of eggnog into each glass for a cold drink. For a thicker milkshake-like consistency, fill your glass entirely with ice before pouring. You can top your glass of eggnog with Keto whipped cream or a sprinkle of cinnamon.
