Coconut milk Beverage, unsweetened

Erythritol Granulated
1.5 tbsp
Cinnamon

Step 1
Start by making cauliflower rice. Wash and roughly chop the cauliflower head. Place the chopped cauliflower in a food processor, and pulse until fine in texture. The size should be similar to that of rice.Step 2
Place a medium-sized saucepan over medium heat. Add the cauliflower rice, coconut milk, erythritol, ground cinnamon, and sea salt. Mix with a spatula.Step 3
Bring the mixture to a boil and reduce it to a simmer. Cover with a lid and cook for 15 minutes until thick. Stir occasionally to prevent the mixture from sticking to the bottom.Step 4
Remove the lid. Add in the vanilla extract. Turn off the heat. Transfer the pot to the countertop—portion the porridge into 2 bowls. Garnish with walnuts and pumpkin seeds.

9.07 oz (257 grams) of cauliflower -- is that quantity for the entire head of cauliflower that I buy at the store? Or is that the quantity of cauliflower RICE I should be able to get from the whole head? In other words, how much cauliflower rice do I actually use for the recipe? Thanks!

I’d get a small to medium sized cauliflower. Take off the leaves and chopped of the butt then use a cheese grater. You’ll be surprised that it’s not really as much as you think. I don’t think the recipe has to be exactly because you’re going to add milk and sweetener. I always grate cauliflower and use as rice or stir fry’s. Very good.
