    Cut the broccoli into smaller florets. Add to a food processor and process until it resembles rice. Set it aside.

    Peel and finely chop the onions. Peel and mince the garlic. Add the butter and olive oil to a large skillet and heat up over medium-high heat. Add the onions and garlic. Cook for 2-3 minutes.

    Stir in the broccoli and cook for 10-12 minutes. Stir occasionally. The broccoli should be tender and slightly crispy.

    Meanwhile, cook the bacon according to your desired crispiness. Shred the cheddar. Chop the parsley. Add the cooked bacon, cheddar, and parsley to the pan and mix well. Cook for 2-3 minutes or until the cheese starts to melt.

    Pour in the broth. Season with salt, black pepper, and thyme. Stir all well and cook for 2-3 minutes.
