Keto Garlic Chive Cucumber Dip

For those who aren’t quite the “ranch fanatic” that everyone else is - this cream cheese based dip is excellent for pairing with fresh keto veggies! The dip is loaded with flavorful garlic and chives as well as cooling cucumber. Enjoy the dip with additional cucumber slices, bacon chips, or freshly cut broccoli and cauliflower!

Ingredients

  • Cream Cheese

  • Cucumber

    1 tablespoon, cut pieces

  • Step 1

    In a microwave-safe bowl, microwave the cream cheese for 25-30 seconds in 10 second increments or until the cream cheese is soft and pliable like a thick sauce. Stir the olive oil into the warm cream cheese until the mixture is emulsified.

    Dice the cucumber and stir it into the dip. Stir in minced garlic and chives as well. Transfer your dip into your serving bowl and set it in the refrigerator for 30 minutes to set (the olive oil keeps the dip creamy).

    Enjoy with your favorite dipping items! The original recipe here makes about ¾ cup dip.

    This is definitely one of my favorite snacks. It’s so good that it needs no additions, but I did add a dash of parsley and dill because I love herbs. It just gave it more “Bam!”.
