These fathead dough rolls are easy to make and made with simple ingredients like mozzarella cheese, cream cheese, almond flour, and coconut flour. They are perfect because they use Low Carb pantry staple ingredients, making them accessible to whip up any day of the week. The cheeses are melted together and then combined with the flours to create a soft dough. Once formed, the dough is divided onto a baking sheet. The rolls are imprinted with a line to give them a nice shape during baking. The result is a soft and light treat that is very bread-like in texture, perfect for spreading softened butter onto!

What is a fathead dough?

Fathead dough is a gluten-free, Keto and Low Carb friendly dough that is made using mozzarella cheese, cream cheese, egg, and some type of Low Carb flour (like almond or coconut).

Can I make any substitutions for the cheeses?

You can swap the mozzarella cheese for any other easy-to-melt shredded cheeses like Pepper Jack, Colby Jack, or Chihuahua cheeses. The cream cheese cannot be swapped out and is critical for the success of this recipe!

Do these freeze well?

Yes, these rolls freeze well in a ziplock bag. When ready to use, simply reheat in the microwave or the oven until heated through.

How do I know these are finished baking?

The rolls will be nicely browned and hollow sounding when tapped. They should not deflate when they exit the oven. If they do, this means that they are underbaked, and should go back into the oven and be given more time.

    Preheat an oven to 350 F. Line a baking sheet with parchment paper. Combine the mozzarella cheese and cream cheese in a microwave-safe bowl. Microwave on high for 45 seconds. Stir the mixture. Then, microwave on high for another 45 seconds until completely melted.

    Add the melted cheese mixture to the bowl of a food processor. Add in the remaining ingredients except for the eggs. Pulse the mixture until it is well combined and looks dough-like. Then, add the eggs and pulse until the mixture is incorporated. You will want to add the eggs last like we have done here, so the melted cheese doesn’t cook the eggs.

    Remove the blade from the food processor and scoop out the dough into another bowl if necessary. Divide the dough into eight equal pieces. The dough will be sticky. Wet your hands and roll each into a ball. Place them an equal distance apart on the parchment-lined baking sheet (about 2” or more if possible).

    Use a knife to score the tops of each of the rolls. The dough will be sticky, so you may need to rinse the knife with hot water between cuts.

    Bake for 20-21 minutes until the rolls are nicely golden brown. If they begin to deflate as they exit the oven, immediately place them back in the oven for several minutes until cooked.
