Low Carb Grilled Gochujang Chicken Thighs

These Low Carb Grilled Gochujang Chicken Thighs are the perfect amount of spicy, salty, and funky, thanks to the addition of fermented pepper paste, aka Gochujang. Tender chicken thighs are marinated with soy sauce, fish sauce, gochujang, sliced scallions (white part only), and sesame seed oil. The marinating process is a quick one! Since the ingredients are aromatic, only let the marinade sit on the chicken for a couple of hours. Once marinated, the gochujang thighs go onto the grill to cook and obtain a delicious sear. Serve whole or sliced with cauliflower rice.

What if I do not have a meat thermometer?

You can also check the doneness of the chicken thighs by picking the largest thigh and breaking it in half on the grill. If the inside is no longer pink, then the rest of the thighs will be done too.

  • Step 1

    Combine the chicken thighs with the soy sauce, fish sauce, gochujang paste, sliced white parts of the scallion, and sesame seed oil. Mix the paste into the sauce as well as the chicken.

    Allow to marinate for 1-2 hours.

    Preheat a grill to 450 F. Sear the chicken thighs on the first side for several minutes. Wait until they develop an excellent grill pattern.

    Flip the chicken thighs and cook on the other side for several minutes or until the chicken is cooked through and the internal temperature is 165 F.

    I made this, cooked in air fryer, first I kept all ingredients however the gochujan 2 Tbsp, soya sauce used tamari soya sauce 0 carbs, and fish sauce if you like the taste same amount less if not.. I used 1 tspp much. For 2 boneless skin on 2 thighs for 2 carbs soya sauce, gochujang, fish sauce have added sugar, check out t&t they have some lower yet its still plenty spicy

      What is it that is so high in carbs? Is it the soy sauce? If so, can’t that be subbed for something a little less limiting to the lifestyle?

        It's the gochujang sauce 2 gr per teaspoon.

      Sounds tasty, but one thigh is 9 carbs? Will have to pass, do to starvation.

        Why my name is Momo.. ihave no clue! But anyway... its all the sauces that make this high carbs. you could do soy sauce, mix w/ sugar free ketchup and hot sauce! :)
