Coconut Oil

Food Cupboard Home Baking Almonds Ground by Sainsbury's
4 ounce
Cocoa Powder, Unsweetened
1 tablespoon
100% Pure Erythritol by Now
1 tsp
Coconut, Dried, Shredded Or Flaked, Unsweetened
1 tablespoon, shredded
Coconut Oil
1-½ tablespoon
Maple Flavored Syrup by Lakanto
1 tablespoon
Vanilla Extract
1 teaspoon
Raw Coconut Butter by Artisana Organics
½ cup
Maple Flavored Syrup by Lakanto
1 tablespoon
Coconut Oil

Cocoa Powder, Unsweetened

Recipe Steps

Step 1
Add the ground almonds, erythritol and one tablespoon of cocoa powder to a mixing bowl. Melt 1.5 tablespoons of coconut oil and add to the bowl. Mix together to form a crumb.Step 2
Add the shredded coconut and stir through the crumb.Step 3
Tip the base mixture into a freezer proof 6x6 inch dish or mold and press into a firm and even layer. Transfer to the freezer for 10 minutes to set.Step 4
Whilst the base is setting you can prepare the filling. Add the coconut butter, 2 tablespoons of coconut oil, 1 tablespoon of lakanto syrup and vanilla to a food processor. Blend until smooth and creamy.Step 5
Remove the base from the freezer and spoon over the coconut filling. Return to the freezer for a further 10 minutes to set.Step 6
Whilst the filling sets you can prepare the topping. Add the remaining coconut oil, cocoa powder and syrup to a food processor. Blend until smooth and sauce like.Step 7
Remove the bars from the freezer and spoon over the chocolate topping.Step 8
Transfer back to the freezer for a further 15 minutes to set the top. Remove from the freezer 10 minutes before serving and slice with a warm knife.

This is NOT helpful for those following low carb diets!!! 32 total carbs per serving and it makes 6 servings. If it’s as good as it looks - no way am I eating just 1. These kinds of recipes spark carbohydrate binges than can last for weeks.

This recipe does not look worth it for the carbs and calories and effort. Total carbs are 31.6 and my total limit for a day is 20. I feel like this recipe does not belong on this website for low-carb.

Are you tracking total carbs? The amount of fiber and sugar alcohols knocks this down.

I totally agree. The last thing I want to see, when I’m logging my food, so I can stay under 10 total carbs/day, is a recipe that is more than 10 total carbs! Especially when it comes with a picture of sweet poison that my brain remembers as a pleasant experience. NOT HELPFUL!

Very bad. Has the maker ever tasted a Nanaimo bar? I will be throwing the entire batch away. I look forward to trying other keto Nanaimo bars that use ingredients like butter, eggs, cream cheese, cream....

So it’s kinda bland, maybe next time I’ll use sweetener. Other then that not bad for a treat once and a while
