Best Paleo Air Fryer Chicken Fajita Sweet Potato Bowls

The air fryer is a wonderful way to make easy Paleo Chicken Fajita bowls, with nicely caramelized sweet potatoes seasoned with Southwest-style spices like garlic, paprika, and ground cumin. Once the sweet potatoes are diced, cooked, and caramelized, they are set aside. Then the peppers and onions are caramelized in the air fryer, and finally, the diced seasoned chicken is added. Once all the components are cooked and ready to go, all the ingredients are placed back into the air fryer to heat through before serving.

What is the best type of chicken to source for this recipe?

We prefer to use pasture-raised organic chicken breast for this recipe, but if you cannot source this type of chicken, feel free to use conventional chicken breast.

  • Step 1

    Peel the sweet potatoes to remove the skins. Then, dice them into a uniform 1” x 1” dice. Place the potatoes directly into the bottom of the air fryer without a rack. Season them with three tablespoons of olive oil, 1 ½ tsp kosher salt, ½ tsp granulated garlic,½ tsp smoked paprika, and ¼ tsp ground cumin.

    Toss them well. Roast the sweet potatoes in the air fryer at 400 F (200 C) for 15 minutes. Check them for browning. If not entirely, caramelized, give the basket a shake and then cook them for another 5 minutes. Remove the sweet potatoes into a bowl.

    In the meantime, julienne the onions and pepper. Season with ¼ tsp kosher salt. Roast these at 400 F (200 C) for 7-10 minutes or until kissed with caramelized edges. Set these aside in the bowl with the sweet potatoes.

    While the onions and peppers are cooking, dice the chicken. Season the chicken with three cloves minced garlic, 1 tsp kosher salt, ½ tsp chili powder, ½ tsp smoked paprika, ½ tsp onion powder, and ¼ tsp ground cumin. Feel free to add cayenne pepper for a kick. Roast the chicken at 400 F (200 C) for 15 minutes. Add additional time as needed to cook the chicken through.

    Place everything back into the air fryer and cook at 400 F (200 C) for another 5 minutes to reheat everything together. Serve immediately! Place the sweet potatoes into the bottom of a bowl and top with the onion and pepper mixture and the chicken—top bowls with chopped cilantro.
