Can you have bread on the AIP diet?

Most bread recipes contain grains, nuts, dairy, or eggs, which are not AIP compliant. AIP is an elimination diet that determines food allergies and sensitivities in those suffering from autoimmunity. This diet is based on the Paleo diet and removes all potentially problematic foods, including grains, dairy, eggs, legumes, beans, nuts, seeds, nightshades, processed foods, and foods with chemicals and additives. As long as the bread is prepared using AIP-compliant ingredients, you can include it in your diet.

What is tigernut flour?

Tigernut flour is made from peeled, finely ground tigernuts. As confusing as it sounds, tigernuts are not nuts; they are a small root vegetable. The flour is naturally sweet, with a nutty flavor, making it perfect for AIP baking.

Why are we using gelatin in this recipe?

Making grain-free bread that doesn’t fall apart isn’t an easy task. Take away the eggs, and you have a difficult mission ahead of you. Fortunately, gelatin can be used in AIP recipes as a binder, and it does its job well.

How to make this AIP bread?

This tigernut bread is actually easier than preparing regular bread. There is no proving, rising, and endless waiting. First, bloom the gelatin by mixing it with water. Add boiling water and whisk until dissolved. Add the remaining wet ingredients to the gelatin and whisk. In another bowl, mix the dry ingredients. Combine the wet and dry ingredients and then transfer the batter to a lined loaf pan. Bake for 40 minutes or until an inserted toothpick comes out clean.

    Preheat your oven to 350F /180 C and line a loaf pan with baking paper. Place the gelatin powder with 2 tbsp room temperature water. Let the gelatin bloom for a couple of minutes.

    Add the boiling water and whisk. Place the bowl in the microwave and heat for 10 seconds until the gelatin is dissolved. Add the oil, coconut yogurt, and vinegar and whisk until incorporated.

    Add the tiger nut flour, tapioca flour, baking soda, and salt. Whisk until smooth. Transfer the batter to the lined loaf pan.

    Bake for 40 minutes or until an inserted toothpick comes out clean. Remove the loaf from the oven and let it cool for 10 minutes. Transfer to a baking rack and let it cool completely.
