Your favorite greasy pizza toppings are combined into this ultimate Keto stew. In this recipe, you’ll find chunks of seasoned Italian sausage, flavorful bell peppers, tender mushrooms, complimentary olives, and a thickened tomato broth. Enjoy a cup of this Keto pizza stew as a light lunch or pair it with a side dish for a more filling meal. Optional side dishes are mentioned further below in this introduction. If Italian sausage or pork is not your ideal protein, you can find substitutions also listed below in this introduction. Within the recipe instructions are options for thickening the broth even more or adding a layer of melted cheese. Otherwise, you can enjoy this Keto pizza stew as a dairy-free, low-carb meal.
Side Dishes To Pair With Keto Pizza Stew
This crockpot pizza stew recipe really tastes like a pizza from your favorite Sunday football takeout place. It’s delicious on its own for anyone that east lighter meals in the afternoon or evening but still need a high-fat content. If you need a more filling meal, try pairing the stew with the Carb Manager Keto Tomato and Artichoke Salad. The Carb Manager Low Carb Sweet and Crunchy Broccoli and Bacon Salad is another good choice. Low Carb Italian Mozzarella Sticks or Keto Meaty Italian Cucumber rolls are good side dishes as well. For a drink, try the new Carb Manager Keto Spiked Sweet Tea!
Protein Substitutions
Crumbly, spicy Italian sausage is a great pizza topping, but some may find it too greasy. To maintain a high-fat content, you’ll need a protein with high amounts of fat. Ground beef can be browned in the same way as Italian sausage before being added to your crockpot. If you don’t want ground meat, try using chicken thighs. You’ll need to cook the chicken thighs fully before adding it to the crockpot. Roast the chicken in a pan or boil in water before cubing or shredding the chicken. Then, continue the recipe as normal. If you’d prefer to not have meat in your stew, adding extra parmesan cheese into your bowl is a clever way to include protein and fat. Make sure to use vegetable broth for a fully vegetarian Keto stew.

Step 1
Brown your Italian sausage first. It’s up to you to decide if you want to use spicy or mild sausage. Use either ground sausage or remove the casing from Italian sausage links. Brown the meat in a wide pan over your stove on high heat. Use a spatula to break the ground sausage up into chunky bites. The sausage will break down more as it cooks in your crockpot, but you want hearty bite-sized pieces. Set the browned meat aside for the next step.Step 2
Pour the olive oil in the base of a crockpot. Next, toss in diced bell peppers, mushrooms, and olives. Sprinkle the oregano, onion powder, basil, and garlic over the veggies. Follow with the tablespoons of marinara sauce. Place the browned sausage on top of the marinara and pour the beef broth over the meat. Cook the crockpot on high heat for 4 hours or on low for 8 hours. Stir all the ingredients together before serving 1 cup per person. Follow Steps 3 and 4 for optional additions to your stew.Step 3
Option #1: Before turning off the crockpot, remove 1 cup of liquid. Stir 1-2 teaspoons of cornstarch into the liquid to thicken it before stirring back into your crockpot. Let the stew thicken in the crockpot with the lid off for another 10 minutes before serving. If you don’t want to use cornstarch, you can do the same thing with 1 ounce of cream cheese. Make sure the cream cheese is at room temperature before stirring into the hot liquid. Serve the thickened stew or continue onto the next option.Step 4
Option #2: Turn your oven broiler on to high. Fill oven-safe bowls with servings of stew. Lay a slice of mozzarella cheese over each serving of stew and set the bowls on a sheet tray. Melt the cheese under your broiler until the cheese bubbles and turns golden brown. You can also do this with provolone or smoked gouda cheese. You can add extra grated parmesan or crushed red pepper flakes on top of your stew just like you would a pizza.
