  • Step 1

    Heat a tablespoon of olive oil in a skillet over a medium heat. Finely slice the onion and add to the pan along with the balsamic and lakanto syrup. Stir well to combine. Cook for a minute or two until just softened then reduce the heat to low. Continue to cook for a further 5-6 minutes or until the onions are sweet, tender and slightly caramelized.

    Divide the onions between the four pancakes.

    Tear the prosciutto into bite sized chunks and arrange on the pancakes.
