Best Slow Cooker Keto Chicken Enchilada Casserole

14 ratings

If you are a fan of chicken enchiladas, then you will LOVE this slow cooker cheesy casserole version. It is saucy, flavorful, and mouthwatering. This recipe is perfect for beginner cooks and only needs 10 minutes of active prep time. The ingredients for this low-carb casserole are similar to any other Keto enchilada. It starts with a base of protein, in this case, chicken breasts and thighs, drowning in tomato sauce, seasoning, and onion slices. These ingredients are cooked in a slow cooker, then sprinkled with Mexican blend shredded cheese and broiled to golden perfection.

This Keto slow cooker chicken casserole recipe is a huge crowd-pleaser. It is the perfect addition to gatherings and parties. This recipe can easily serve 6 people, but you can double or triple it to feed more.

Are enchiladas Keto?

Traditional enchiladas are not Keto-friendly because the chicken is wrapped in flour tortillas. If you omit the tortillas, then enchiladas can be Keto, but this depends on the other ingredients used and their quantities. For example, onions are a staple ingredient for making this Mexican dish; however, they are high in carbs and must be used in small amounts. Another ingredient to look out for when making enchiladas is the sauce. Store-bought enchilada tomato sauce often contains high-carb filler ingredients such as cornstarch. The best option would be to make your own using sugar-free canned tomatoes and seasonings, as we did in this recipe.

Is this recipe suitable for meal prep?

One of the great things about this recipe is that it can be prepared ahead of time. Prepare this low-carb enchilada casserole as per instructions, divide it into 6 containers, and store them in the fridge. When you’re ready to eat, place one container in the microwave until heated through.

Do you have to use a slow cooker?

Keto slow cooker recipes are perfect for busy people. This recipe needs 10 minutes of active prep time, and then you just let the slow cooker do its thing. While the Keto enchilada casserole cooks, you can run errands, finish some home chores, or create more meals for your Keto meal prep. If you don’t own a crockpot, you can use an instant pot or cook it in a Dutch oven on low for 2-3 hours.

You can also use the Zero Carb Taco size tortillas if you want to have tortillas with it. I toasted them over the stover burner for a little more flavor.

I used Rotel no salt added tomatoes and green chilis to spice it up some. Had to add more salt for flavor. A do over for sure!

It's OK. It's a one flavor meal. Really misses on tasting like an enchilada to me.

Throw some Serrano peppers in with the chicken. Adobo seasoning would perk it up too

This might be a silly question for some. When I mix lemon zest, juice,SC and juice together what do I do with it. Is that the topper for the enchiladas?

Yes. It’s the sour cream topping.
