Ingredients

Recipe Steps

  • Step 1

    Add the blueberries, water and erythritol to a small pan over a medium/high heat and bring to a gentle boil.

    Reduce to a simmer and cook for 5 minutes, mashing the blueberries slightly until you have a reduced syrup.
  • Step 3

    Remove the pan from the heat and add the lemon juice and chia seeds, stirring well to combine. Set aside to thicken and cool completely. Transfer to an airtight jar and refrigerate until ready to use.

    I submitted to which I never received an answer. Why are blueberries considered keto friendly here and in the list of foods, blueberries it says keto avoid? Why the double standard? Which is correct?

      Hi Bev, great question! I can see why that would be annoying to observe those double standards. However, you may be helped by keeping in mind that not everyone who uses this app is here for keto. I've seen people here who while they follow a lower carb diet than the standard american diet (which both WOE options are very high carb counts vs keto). Also, some have already lost all their weight and use the app differently to maintain their healthy weight. I eat "keto avoid" foods occasionally and in smaller quantities but still include them in my diet. Onions, for example, are one such food. While I generally use green onions for that flavor with less carbs, I still make dishes with yellow onions (which are "keto avoid") but then again, I'm not doing "keto" but instead the anti-inflammatory diet.

      I plan on making this and switching out the erythritol for nothing, or a bit of stevia. I find blueberries sweet enough on their own. Curious, what did you use?

      Add some lemon zest with the juice, a little cinnamon is a magic ingredient too, as is a tbsp of butter!!
