  • Red Bell Peppers, Raw

  • Step 1

    Slice the bell peppers into thin strips. Heat the oil in a skillet over a medium heat and add the pepper strips, cooking for 3-4 minutes to soften.

    Crush the garlic, slice the olives and roughly chop the capers. Add to the pan along with the lemon zest and stir well to combine. Cook for a further 2-3 minutes until the peppers are soft and the garlic is tender.

    This didn’t seem like it was going to have much flavor but I was very surprised that it did have a lot of flavor. The only thing I did different was I used kalamata olives instead of black olives because that’s what I had on hand. Was quick to whip up for a lunch. UDATE: I’ve since made this several times with black olives and kalamata olives and every time regardless of the olives, it was delicious. Works as a great side dish pork chops or steak too.
