Keto Spanish Croquetas
Spanish Croquetas are traditionally made using a roux mixture that is seasoned with nutmeg, ham, and diced onion. We took the same idea and transformed it into a Keto diet Spanish recipe. Our method uses Keto pancake mix seasoned in a similar way. We have also used water for the liquid, but feel free to use milk for added flavor. Each croqueta is formed by hand and then gently rolled in a small amount of the pancake mix to make them easier to handle. Each croqueta is fried in heart-healthy avocado oil to golden brown perfection. The bite-sized nature of these is kid-friendly too! You will love the gluten-free and low carb nature of these for your whole family.
What should I look for in a Keto pancake mix?
Make sure the mixture is gluten-free and even dairy-free if that is an issue for you. Using a pancake mix is a great way to make these croquetas quickly and easily.
What kind of ham should I use?
You can use any kind of ham, but for the most authentic flavor use Spanish ham like serrano or Iberico. This kind of ham is very salty compared to American ham, so the recipe will not need any additional salt. Salted food is great for those on any low carb or Keto diet!
How much oil should I use for frying?
Please use 1 cup of avocado oil for frying. The recipe below only states 1 oz of avocado oil because it is reflecting the amount of oil pickup for accurate macros.

Step 1
Melt the butter in a small saucepan. Add the Keto pancake mix to the saucepan. Stir well with a whisk.Step 2
Switch to a spatula and slowly pour in the water. Stir well to incorporate the liquid. For a richer flavor, add nondairy milk or milk.Step 3
Fold in the diced white onion, grated nutmeg, ham, and kosher salt. If using traditional Spanish ham, skip the additional salt. Also, try to use freshly grated nutmeg as the flavor is a lot cleaner.Step 4
Form the dough into log-shaped croquetas. Sprinkle the smallest amount of pancake mix onto a plate and roll the croquetas in it to make sure they are not too sticky on the outside.Step 5
Heat another small saucepan over medium heat. Add in 1 cup of avocado oil until the temperature reaches 375 F. Place 2-3 croquetas into the hot oil.Step 6
Rotate them so they will achieve a nice golden brown color evenly/. Place them onto a paper towel-lined plate. Repeat with any remaining croquetas. Serve immediately.
