Low Carb Christmas Gingerbread Smoothie

This rich and creamy Keto smoothie is packed with fats and flavor from warming gingerbread spices. Our simple low-carb smoothie is prepared with coconut cream, almond milk, smooth almond butter, ground ginger, cinnamon, nutmeg, and a little maple-flavored syrup. This makes a great Keto Christmas recipe, perfect for breakfast or a sweet festive treat.

What kind of coconut cream should you use?

We have used canned cooking coconut milk for this low-carb smoothie recipe. The coconut milk needs to be refrigerated so that the cream on the top of the milk is chilled and firm. The firm milk from the top of the can forms a layer of solid coconut cream, perfect to add fats and thickness to your Keto smoothie. You may also be able to buy canned coconut cream on its own to use in this recipe.

Can you use a different sweetener?

We have used maple-flavored syrup to add sweetness to our Keto Christmas smoothie. The maple syrup perfectly complements the gingerbread flavors, however, you may use any alternative low-carb sweetener you prefer. Please add your alternative sweetener to taste, adjusting the quantity as needed. Please be sure to adjust your macros to account for any changes made to the recipe.

What if you don't mind dairy?

If you can consume dairy, then you can swap the coconut cream for heavy cream.

  • Step 1

    Scoop the chilled coconut cream from the top of the can of coconut milk and add to a blender. The remaining milk may be reserved for another recipe. Add the almond butter, syrup, and spices to the blender with the coconut cream.

    Add the almond milk to the blender and blend until smooth and well combined. Taste the mixture and adjust seasonings and sweetness as desired. You may also add a little water if needed to thin.

    Once the smoothie flavor is to your taste and consistency, pour into a large serving glass. Serve the smoothie immediately as is, or with ice cubes. Optionally top with a dusting of ground cinnamon to serve.
