Step 1
Preheat your oven to 350F/180C, line a large baking sheet with parchment paper, and grease it. To a large bowl, add 4 tbsp cream cheese, softened butter, 1/3 cup granulated allulose, and ½ tsp vanilla. Beat using a hand mixer until blended and creamy.Step 2
Add the egg and beat again until incorporated. Add the almond flour and mix until smooth and creamy. The batter will be thinner then a typical cookie dough - resembling frosting or a thick cake batter.Step 3
Using a rubber spatula, transfer the dough to the center of the prepared cookie sheet. Grease a second piece of parchment and place it on the dough. Using your hands, form the dough into a 12" (30cm) circle, ensuring the thickness is uniform.Step 4
Remove the top layer of parchment and bake the dough in the preheated oven for 20 to 25 minutes or until golden brown. Allow to cool completely before assembling.Step 5
To make the cream, add 2 tbsp of cream cheese, powdered allulose, and ½ tsp vanilla to a bowl. Beat using a hand mixer until incorporated, then add the heavy whipping cream. Beat until light and fluffy. Cover and refrigerate for assembly.Step 6
Thinly slice the ½ peach and cut the blackberries in half. Spread the cream cheese frosting over the giant cookie. Arrange the peach and blackberry slices on top.Step 7
Garnish with some tiny mint leaves. Slice the cookie into 12 slices and serve immediately!
