Keto "Fruit Pizza" Cookie

Refreshing Keto dessert recipes are a favorite at Carb Manager! Here's one that is fresh, indulgent, colorful, and appealing to all ages and diet preferences. This dessert "pizza" comes together in under an hour and can be topped with anything you desire!

Are peaches Keto-friendly?

Peaches are not typically considered Keto-friendly due to their relatively high-carb content. One medium-sized peach contains around 12 grams of net carbs, which can significantly impact the limited carbohydrate allowance of a Ketogenic diet when eaten all at once. The primary goal of a Keto diet is to achieve and maintain a state of ketosis, where the body relies on fat for fuel instead of carbohydrates. Consuming peaches can easily exceed the daily carb limit and potentially disrupt ketosis. However, it's worth noting that this recipe uses only half of a peach divided among 12 slices, contributing 0.5 grams of carbs to each slice. If you are against using peach in this recipe, swap it for a lower-carb fruit like strawberries.

Can you use any cookie recipe for this pizza cookie?

Absolutely! While we have provided a recipe for a large soft cookie here, you can use your go-to Keto cookie recipe. The recipe you use will impact the texture of this cookie pizza.

How can you customize this recipe?

The best Keto family-friendly desserts are ones that can be customized easily. This recipe is super versatile and can be recreated into many versions. You can add cocoa powder or ground cinnamon to your cookie dough to give it more character. Instead of cream cheese, top this dessert pizza with mascarpone, whipped cream, or sweetened whipped cottage cheese. As for the fruits, you can use seasonal ones or berries since they are the most Keto-friendly.

  • Step 1

Preheat your oven to 350F/180C, line a large baking sheet with parchment paper, and grease it. To a large bowl, add 4 tbsp cream cheese, softened butter, 1/3 cup granulated allulose, and ½ tsp vanilla. Beat using a hand mixer until blended and creamy.
    Step 1
  • Step 2

Add the egg and beat again until incorporated. Add the almond flour and mix until smooth and creamy. The batter will be thinner then a typical cookie dough - resembling frosting or a thick cake batter.
    Step 2
  • Step 3

Using a rubber spatula, transfer the dough to the center of the prepared cookie sheet. Grease a second piece of parchment and place it on the dough. Using your hands, form the dough into a 12" (30cm) circle, ensuring the thickness is uniform.
    Step 3
  • Step 4

Remove the top layer of parchment and bake the dough in the preheated oven for 20 to 25 minutes or until golden brown. Allow to cool completely before assembling.
    Step 4
  • Step 5

To make the cream, add 2 tbsp of cream cheese, powdered allulose, and ½ tsp vanilla to a bowl. Beat using a hand mixer until incorporated, then add the heavy whipping cream. Beat until light and fluffy. Cover and refrigerate for assembly.
    Step 5
  • Step 6

Thinly slice the ½ peach and cut the blackberries in half. Spread the cream cheese frosting over the giant cookie. Arrange the peach and blackberry slices on top.
    Step 6
  • Step 7

Garnish with some tiny mint leaves. Slice the cookie into 12 slices and serve immediately!
