Easy Keto Holiday Cookies

These colorful Holiday Cookies are among the easiest Keto holiday desserts you can prepare this year. They are a fantastic treat for the entire family, whether on Keto or not (even the kids will enjoy these). We prepared these cookies with gelatin powder instead of the usual JELL-O to keep them low-carb and Keto-friendly. Then, we added some green and red food coloring (you can add some other colors of your choice). Please note that the total preparation time includes the time necessary to refrigerate the dough and that you actually need about 35 minutes to prepare them. The recipe yields 20 cookies, but you can prepare more. Remember to cool the cookies to room temperature before trying to remove them from the cookie sheet, as they crumble easily. Serve as a delicious holiday dessert or a quick afternoon snack. Enjoy!

    Let the butter and cream cheese sit at room temperature for 15-20 minutes to soften. Add the softened butter and cream cheese to a bowl. Using a hand mixer, beat at medium speed until well mixed.

    Add the sweetener, egg, and vanilla extract. Continue to beat until well mixed. Divide the mixture between two bowls. Set it aside.

    Meanwhile, add the water to a small bowl. Sprinkle with gelatin and whisk well with a fork. Let it sit for 4-5 minutes.

    Transfer the gelatin mixture to a small saucepan. Place on the stovetop over medium-low heat. Gently heat up, whisking constantly with a fork, until it melts.

    Divide the melted gelatin between the two bowls. Add the green food coloring to one bowl and the red food coloring to another one. Using a hand mixer, beat until thoroughly combined.

    Equally divide the almond flour, coconut flour, and baking powder between the bowls. Mix until thoroughly combined. Refrigerate for at least 4 hours.

    Preheat the oven to 150°C (300°F). Line a cookie sheet with parchment paper. Shape the dough into 20 balls (ten of each). Slightly flatten each ball with your hands. Bake for 10-12 minutes.

    When done, remove from the oven and cool to room temperature before transferring them to a wire rack to cool completely. Serve the cookies immediately or store them for later. Enjoy!
