Preheat the oven to 400 degrees Fahrenheit.Step 2
Add the pork rinds to a food processor and blend to a crumb consistency.Step 3
Add the parmesan and Italian seasoning and blend again to combine. The mixture will be crumbly and quite fatty.Step 4
Slice the avocado into 8 even slices.Step 5
Beat the egg in a small bowl and add the pork crumb to another bowl.Step 6
Dredge each slice of avocado in the egg until well coated then roll in the crumb, pressing the mixture around the avocado so that it is well coated. Arrange on a shallow oven tray and bake for 10 minutes until crisp and golden.
