Keto Air Fryer Buffalo Chicken Wings

If you do not own a convection oven, an air fryer is an excellent substitute for creating that extra crispy skin. Sure, you could deep fry the wings, but who has time for clean-up? Air frying is a quick and easy way to render and crisp chicken wings. The first step in the cooking process is to render some of the fat at a lower temp. The wings will be pale at this point. Then the heat is cranked up at the end, which allows the wings to crisp to perfection. The final crispy and salty chicken wings are tossed into a classic buffalo sauce made from hot sauce and butter. Feel free to serve these wings with a side of blue cheese and celery sticks for the complete experience.

How should I prepare the chicken wings?

Since the flats and drums cook at different rates, you will need to cut them apart using a knife. First, remove the wingtip and then separate the flat from the drum. Set them aside into two piles, ready to go into the air fryer.

Why do the drums take longer to cook?

The drums will typically take longer to render out and become crispy depending on how much meat is on them. Drums vary a lot in size, so please add additional time to the recipe as needed to get them crispy and golden.

    To start, cut off the wingtips to all of the chicken wings. Use a sharp knife to separate the flat from the drum. Feel free to purchase the flats and drums already separated. Place them on a paper towel-lined plate and use another paper towel to dry off the tops. Sprinkle them all over with kosher salt.

    Place the flats into the air fryer basket fitted with a rack. Make sure they are not touching. Set the air fryer for 375 F for 12 mins flip and repeat for another 12 minutes.

    The wings will look pale and not crispy. Turn the heat up to 400 F and cook them for an extra 6 mins. The flats will be wonderfully crisp now.

    Repeat this same process with the drums, except add an extra 10 mins once the air fryer is turned up to 400 F. In the meantime, heat the hot sauce with the butter for 30 seconds in the microwave.

    Pour this mixture into a mixing bowl and toss the wings in it. Serve immediately.
