  • Step 1

    Preheat your oven to 350 degrees Fahrenheit. Add 1 tablespoon of olive oil to a pan over medium high heat. Season the chicken breast with ½ teaspoon salt, ¼ teaspoon garlic powder and ½ teaspoon chili powder and sear in the pan for 1-2 minutes on each side. Set the pan aside.

    In a small pot or skillet, heat 1 tablespoon of butter over medium heat. Once it melts, add a minced clove of garlic and ¼ cup of onion. Cook for about 1 minute, or until the onion begins to soften.

    Add ½ tablespoon chili powder, ½ teaspoon cumin, ½ teaspoon dried oregano, ¼ teaspoon paprika and stir. Cook for an additional 30 seconds, then add salt-free tomato sauce, ⅓ cup water, 1 teaspoon apple cider vinegar and ¼ teaspoon salt. Bring to a boil, reduce to a simmer and cover for about 5 minutes.

    Move the chicken to the side of the pan you seared it in and pour the sauce on top. Next to the chicken, add the cauliflower rice. Place the pan in the oven for about 12-15 minutes.

    Grate the cheddar cheese and place it on top of the chicken and place the pan back in the oven for 3-5 minutes. Remove from the oven and top with chopped cilantro.

            This is sooooo delicious! I went a little heavier on the cumin and it was perfect! Instead of the rice in this recipe I made the Keto Spanish Rice recipe I found on here! Didn't even notice the tortillas were missing!

                                  The best is with chipotle Tabasco sauce. Mmm. 😋 I really like this recipe, but I cut the salt from it completely. It’s WAY too salty for me. I add salt to my plate instead and it’s perfect.

                                      I’m brand new to this whole world of keto. My husband wants to join in, however, he is allergic to all poultry and fish. Should he try a different diet like paleo? My real question is, is it going to ruin the balance of this meal if I use lean ground beef? I just realized the whole purpose of the chicken, so it won’t work with ground beef. My bad, lol.

                                        Try looking up something called Veto, its keto for vegetarians however its a lot tougher because of the lack of protein from meat and fish. So he would have to take a lot of pills.
