Can I Make This in A Stand Mixer?
We have allowed our butter to soften to room temperature so that it is easy to mix by hand. Once soft, we have added the cocoa powder, cinnamon, and sweetener and gradually beaten in the coffee until smooth. For convenience, you may prepare the butter in the bowl of a stand mixer using a paddle attachment or in a food processor. Simply whisk up the butter and dry ingredients until smooth and fluffy, then drizzle in the coffee a little at a time and continue to mix until well blended.

Step 1
Let the butter come to room temperature so that it is soft and easy to mash and allow the coffee to cool. Add the softened butter to a mixing bowl and mash lightly with a fork. Add the cocoa powder to the mixing bowl along with the cinnamon, erythritol, salt, and 1/4 of the cold coffee. You may use your preferred low carb powdered sweetener if desired, adjusting to taste.Step 2
Use a fork to mash the butter, cocoa powder, cinnamon, erythritol, coffee, and salt together. Beat the mixture together well to blend the flavorings. Add the remaining coffee a little at a time to the butter, beating together as you go. Keep adding the coffee until it is all fully incorporated, and the butter is smooth and fluffy.Step 3
Scoop the mocha butter out from the bowl and onto a square of plastic wrap or baking paper. Use your hands to form the butter roughly into a log shape. Wrap the edges of the plastic wrap/paper tightly around the butter, securing the ends. Transfer the mocha butter to the fridge to set and firm for two hours. Slice and serve as desired.
