When the craving for cinnamon rolls strikes you can make these lovely cinnamon rolls! Made with psyllium husk powder they are full of healthy fiber. Do not substitute the husk powder in this recipe as it is critical for their shape to hold together. Also, do not substitute the kosher salt for fine salt unless you add about half or else the rolls will be too salty. Warm from the oven, they are smothered with frosting!

Recipe Steps

  • Step 1

    Preheat an oven to 350 F. Combine the almond flour, husk powder, salt and baking powder together.

    Add the boiling water and mix the dough halfway. Add the apple cider vinegar and the egg whites. Mix until combined very well and homogenous.

    Place dough on a piece of parchment paper. Top with another piece of parchment and press dough down with hands to flatten some. Using a rolling pin, roll the dough to a ¼” thickness into a rectangular shape. It doesn’t have to be a perfect rectangle.

    In the meantime, combine 1 stick of butter, brown sugar, cinnamon and a pinch of salt.

    Cream together.

    Top dough with creamed brown sugar mixture.

    Spread thin with a small offset spatula.

    Roll up the rectangle from the short end that is the least angular so it will be on the inside of the rolls. Pinch the roll together at the seam. Cut into 9 equal rolls and place into a greased 8” x 8” pan.

    Bake for 30 minutes. Allow the rolls to cool some, before draining off the extra butter created in the pan.

    Cream together the Swerve confectioners sugar, vanilla extract and water. It will be a thick, creamy mixture.

    Spread on top of the still warm cinnamon rolls!

    Followed this recipe exact. Dry dry dry. Came out nothing like it shows in the picture had to add more water

      I added 1/2 coconut flour to dough and switched the butter for cream cheese. I made these side by side with regular cinnamon rolls my family. Obviously the texture and size was different but the satisfaction taste was right on. They kept in the fridge for over a week and were a perfect snack.

      Wish I would’ve read the reviews before I bought tailored ingredients!! I ended up adding a whole other cup of almond flour and doubled the baking powder. Because the taste was a little odd, I added ground cinnamon to the dough. Even with the extra flour, it was creamy and not solid enough. So I switched it up and made “cinnamon roll cupcakes” using a cupcake pan. Scooped globs of “dough” in each cup, then scooped a tbsp of cinnamon butter on top. Baked for 35min at 350. Finished by drizzling a little bit of icing because it was really sweet. Honestly, thanks to MY changes to the recipe, they turned out great!

        Bad recipe! The dough is wrong! Too wet! Thicken it up, less water Plus OIL/FAT is needed in the dough. No reason for egg whites, just silly. Use the whole egg. 1/2 liquid, more dry ingredients plus fat and it will work. (Amateur creator).

        I made these for my family and everybody loved them. The only weird thing I found was the color of the rolls, apparently the psyllium husk powder I used turned them purple. Overall, really yummy and great snack!

          A giant goober mess!!! Do these people not test out these recipes before they put them into the app! My gosh, these things were ridiculous!!! What a mess. Gooey and gummy. I even tried baking the dough first for about 10 minutes to dry it up then spread the cinnamon filling in. Couldn’t cut it into smaller pieces cause it didnt roll up right. Put it back into the oven and all the cinnamon filling melted and then started to burn so my oven started to fill with smoke. Took it out and put into a glass baking pan to cook. All in all.....i wont be making this again. Big waste of time and ingredients. I didnt read the reviews until after. Won’t be doing that again!!!

            You have to use baking papper toe press out its the only thing that does not stick to the dough most keto dough are very sticky the more you bake the easyer you wil find it. Use baking papper on bottom and top do not roll it out with a roller just press flat with baking papper and roll gently do not press it together just roll and cut

          Well, these didn't come out very well for me. Like many others posted, they still came out very gummy, even though I baked them at a higher temp and for longer duration. I actually put less Swerve in them, too. I'm saving the icing for something else. It's ok but it was too overbearing for these cinnamon rolls. If I were more skilled as a baker, I would tinker with this recipe to make them more fluffy, like real cinnamon rolls. But that is not my wheelhouse at all!!! If someone has a fix for these, I would love to remake these!

              These were terrible. Flat, mushy, chewy and not good at all. So disappointed. Like previous comments a waste of ingredients. Chewy like raw on inside. Followed directions perfectly.

                These were delicious. You do have to be careful they don’t come out soggy. What I did was I cooked it at 375 for 35 mins. I didn’t have the right ingredients for the icing so we ate it without it and they were delicious. My kids and husband loved them!!!

                      Just made these according to the recipe. They handled well rolled well. I really like them but I like them better without the icing. I put a little on the side to taste both ways never liked the traditional ones with icing either. We will see what hubby says he asked me what was taking so long to make these lol

                          I agree! They were gummy and grainy..I don’t even know how that’s possible. Never again! Bummed about all the money I spent for ingredients.

                        So I really liked this. The only reason it got 4 stars is because you need to adjust some things. I cooked mine at 375 for 30 mins. Do not use as much brown sugar it makes it really wet. I drained a good cup out of the finished product. I also used my kitchen aid mixer to mix the dough. Was needed or that would have taken forever. Overall it is very yummy and feels and taste like a cinnamon roll.

                          I followed this recipe exactly, I double checked my measurements and these turned into a roll of mush Extremely sweet! Waste of expensive ingredients

                            Mine turned into mush too. But it actually tasted okay. I think I’d cook higher and a bit longer. After 10 minutes there was no integrity left. It looked like a mound of dough. I added more cinnamon.

                            Mine also spread out into a wet mush! I don't know how it tastes yet, but it smells lovely. I followed the recipe exactly, as well. I'm disappointed about how it spread out so flatly. It could be a French toast, or thick crepe.

                            Yes, starting at the half a stick of butter and downwards in the ingredient list are the buttercream ingredients!
